Les Parisiens qui, aujourd'hui, en entrant dans la rue Rambuteau du côté
des halles, remarquent à leur droite, vis-à-vis la rue Mondétour, une
boutique de vannier ayant pour enseigne un panier qui a la forme de
l'empereur Napoléon le Grand avec cette inscription:

NAPOLEON EST FAIT TOUT EN OSIER 

ne se doutent guère des scènes terribles que ce même emplacement a vues,
il y a à peine trente ans.

C'est là qu'étaient la rue de la Chanvrerie, que les anciens titres
écrivent Chanverrerie, et le cabaret célèbre appelé Corinthe.

On se rappelle tout ce qui a été dit sur la barricade élevée en cet
endroit et éclipsée d'ailleurs par la barricade Saint-Merry. C'est sur
cette fameuse barricade de la rue de la Chanvrerie, aujourd'hui tombée
dans une nuit profonde, que nous allons jeter un peu de lumière.

Qu'on nous permette de recourir, pour la clarté du récit, au moyen
simple déjà employé par nous pour Waterloo. Les personnes qui voudront
se représenter d'une manière assez exacte les pâtés de maisons qui se
dressaient à cette époque près la pointe Saint-Eustache, à l'angle
nord-est des halles de Paris, où est aujourd'hui l'embouchure de la rue
Rambuteau, n'ont qu'à se figurer, touchant la rue Saint-Denis par le
sommet et par la base les halles, une N dont les deux jambages verticaux
seraient la rue de la Grande-Truanderie et la rue de la Chanvrerie et
dont la rue de la Petite-Truanderie ferait le jambage transversal. La
vieille rue Mondétour coupait les trois jambages selon les angles les
plus tortus. Si bien que l'enchevêtrement dédaléen de ces quatre rues
suffisait pour faire, sur un espace de cent toises carrées, entre les
halles et la rue Saint-Denis d'une part, entre la rue du Cygne et la rue
des Prêcheurs d'autre part, sept îlots de maisons, bizarrement taillés,
de grandeurs diverses, posés de travers et comme au hasard, et séparés à
peine, ainsi que les blocs de pierre dans le chantier, par des fentes
étroites.

Nous disons fentes étroites, et nous ne pouvons pas donner une plus
juste idée de ces ruelles obscures, resserrées, anguleuses, bordées de
masures à huit étages. Ces masures étaient si décrépites que, dans les
rues de la Chanvrerie et de la Petite-Truanderie, les façades
s'étayaient de poutres allant d'une maison à l'autre. La rue était
étroite et le ruisseau large, le passant y cheminait sur le pavé
toujours mouillé, côtoyant des boutiques pareilles à des caves, de
grosses bornes cerclées de fer, des tas d'ordures excessifs, des portes
d'allées armées d'énormes grilles séculaires. La rue Rambuteau a dévasté
tout cela.

Le nom Mondétour peint à merveille les sinuosités de toute cette voirie.
Un peu plus loin, on les trouvait encore mieux exprimées par la ''rue
Pirouette'' qui se jetait dans la rue Mondétour.

Le passant qui s'engageait de la rue Saint-Denis dans la rue de la
Chanvrerie la voyait peu à peu se rétrécir devant lui, comme s'il fût
entré dans un entonnoir allongé. Au bout de la rue, qui était fort
courte, il trouvait le passage barré du côté des halles par une haute
rangée de maisons, et il se fût cru dans un cul-de-sac, s'il n'eût
aperçu à droite et à gauche deux tranchées noires par où il pouvait
s'échapper. C'était la rue Mondétour, laquelle allait rejoindre d'un
côté la rue des Prêcheurs, de l'autre la rue du Cygne et la
Petite-Truanderie. Au fond de cette espèce de cul-de-sac, à l'angle de
la tranchée de droite, on remarquait une maison moins élevée que les
autres et formant une sorte de cap sur la rue.

C'est dans cette maison, de deux étages seulement, qu'était allégrement
installé depuis trois cents ans un cabaret illustre. Ce cabaret faisait
un bruit de joie au lieu même que le vieux Théophile a signalé dans ces
deux vers:

''Là branle le squelette horrible'' ''D'un pauvre amant qui se pendit.'' 

L'endroit étant bon, les cabaretiers s'y succédaient de père en fils.

Du temps de Mathurin Régnier, ce cabaret s'appelait le ''Pot-aux-Roses'',
et comme la mode était aux rébus, il avait pour enseigne un poteau peint
en rose. Au siècle dernier, le digne Natoire, l'un des maîtres
fantasques aujourd'hui dédaignés par l'école roide, s'étant grisé
plusieurs fois dans ce cabaret à la table même où s'était soûlé Régnier,
avait peint par reconnaissance une grappe de raisin de Corinthe sur le
poteau rose. Le cabaretier, de joie, en avait changé son enseigne et
avait fait dorer au-dessous de la grappe ces mots: ''au Raisin de
Corinthe''. De là ce nom, ''Corinthe''. Rien n'est plus naturel aux
ivrognes que les ellipses. L'ellipse est le zigzag de la phrase.
Corinthe avait peu à peu détrôné le Pot-aux-Roses. Le dernier cabaretier
de la dynastie, le père Hucheloup, ne sachant même plus la tradition,
avait fait peindre le poteau en bleu.

Une salle en bas où était le comptoir, une salle au premier où était le
billard, un escalier de bois en spirale perçant le plafond, le vin sur
les tables, la fumée sur les murs, des chandelles en plein jour, voilà
quel était le cabaret. Un escalier à trappe dans la salle d'en bas
conduisait à la cave. Au second était le logis des Hucheloup. On y
montait par un escalier, échelle plutôt qu'escalier, n'ayant pour entrée
qu'une porte dérobée dans la grande salle du premier. Sous le toit, deux
greniers mansardes, nids de servantes. La cuisine partageait le
rez-de-chaussée avec la salle du comptoir.

Le père Hucheloup était peut-être né chimiste, le fait est qu'il fut
cuisinier; on ne buvait pas seulement dans son cabaret, on y mangeait.
Hucheloup avait inventé une chose excellente qu'on ne mangeait que chez
lui, c'étaient des carpes farcies qu'il appelait ''carpes au gras''. On
mangeait cela à la lueur d'une chandelle de suif ou d'un quinquet du
temps de Louis XVI sur des tables où était clouée une toile cirée en
guise de nappe. On y venait de loin. Hucheloup avait, un beau matin,
avait jugé à propos d'avertir les passants de sa «spécialité»; il avait
trempé un pinceau dans un pot de noir, et comme il avait une orthographe
à lui, de même qu'une cuisine à lui, il avait improvisé sur son mur
cette inscription remarquable:

Un hiver, les averses et les giboulées avaient eu la fantaisie d'effacer
l'S qui terminait le premier mot et le G qui commençait le troisième; et
il était resté ceci:

CARPE HO RAS 

Le temps et la pluie aidant, une humble annonce gastronomique était
devenue un conseil profond.

De la sorte il s'était trouvé que, ne sachant pas le français, le père
Hucheloup avait su le latin, qu'il avait fait sortir de la cuisine la
philosophie, et que, voulant simplement effacer Carême, il avait égalé
Horace. Et ce qui était frappant, c'est que cela aussi voulait dire:
entrez dans mon cabaret.

Rien de tout cela n'existe aujourd'hui. Le dédale Mondétour était
éventré et largement ouvert dès 1847, et probablement n'est plus à
l'heure qu'il est. La rue de la Chanvrerie et Corinthe ont disparu sous
le pavé de la rue Rambuteau.

Comme nous l'avons dit, Corinthe était un des lieux de réunion, sinon de
ralliement, de Courfeyrac et de ses amis. C'est Grantaire qui avait
découvert Corinthe. Il y était entré à cause de ''Carpe Horas'' et y était
retourné à cause des ''Carpes au Gras''. On y buvait, on y mangeait, on y
criait; on y payait peu, on y payait mal, on n'y payait pas, on était
toujours bienvenu. Le père Hucheloup était un bonhomme.

Hucheloup, bonhomme, nous venons de le dire, était un gargotier à
moustaches; variété amusante. Il avait toujours la mine de mauvaise
humeur, semblait vouloir intimider ses pratiques, bougonnait les gens
qui entraient chez lui, et avait l'air plus disposé à leur chercher
querelle qu'à leur servir la soupe. Et pourtant, nous maintenons le mot,
on était toujours bienvenu. Cette bizarrerie avait achalandé sa
boutique, et lui amenait des jeunes gens se disant: Viens donc voir
''maronner'' le père Hucheloup. Il avait été maître d'armes. Tout à coup
il éclatait de rire. Grosse voix, bon diable. C'était un fond comique
avec une apparence tragique; il ne demandait pas mieux que de vous faire
peur; à peu près comme ces tabatières qui ont la forme d'un pistolet. La
détonation éternue.

Il avait pour femme la mère Hucheloup, un être barbu, fort laid.

Vers 1830, le père Hucheloup mourut. Avec lui disparut le secret des
carpes au gras. Sa veuve, peu consolable, continua le cabaret. Mais la
cuisine dégénéra et devint exécrable, le vin, qui avait toujours été
mauvais, fut affreux. Courfeyrac et ses amis continuèrent pourtant
d'aller à Corinthe,—par piété, disait Bossuet.

La veuve Hucheloup était essoufflée et difforme avec des souvenirs
champêtres. Elle leur ôtait la fadeur par la prononciation. Elle avait
une façon à elle de dire les choses qui assaisonnait ses réminiscences
villageoises et printanières. Ç'avait été jadis son bonheur,
affirmait-elle, d'entendre «les loups-de-gorge chanter dans les
ogrépines».

La salle du premier, où était le «restaurant» était une grande longue
pièce encombrée de tabourets, d'escabeaux, de chaises, de bancs et de
tables, et d'un vieux billard boiteux. On y arrivait par l'escalier en
spirale qui aboutissait dans l'angle de la salle à un trou carré pareil
à une écoutille de navire.

Cette salle, éclairée d'une seule fenêtre étroite et d'un quinquet
toujours allumé, avait un air de galetas. Tous les meubles à quatre
pieds se comportaient comme s'ils en avaient trois. Les murs blanchis à
la chaux n'avaient pour tout ornement que ce quatrain en l'honneur de
mame Hucheloup:

''Elle étonne à dix pas, elle épouvante à deux.'' ''Une verrue habite en son nez hasardeux;'' ''On tremble à chaque instant qu'elle ne vous la mouche,'' ''Et qu'un beau jour son nez ne tombe dans sa bouche.'' 

Cela était charbonné sur la muraille.

Mame Hucheloup, ressemblante, allait et venait du matin au soir devant
ce quatrain, avec une parfaite tranquillité. Deux servantes, appelées
Matelote et Gibelotte, et auxquelles on n'a jamais connu d'autres noms,
aidaient mame Hucheloup à poser sur les tables les cruchons de vin bleu
et les brouets variés qu'on servait aux affamés dans des écuelles de
poterie. Matelote, grosse, ronde, rousse et criarde, ancienne sultane
favorite du défunt Hucheloup, était laide, plus que n'importe quel
monstre mythologique; pourtant, comme il sied que la servante se tienne
toujours en arrière de la maîtresse, elle était moins laide que mame
Hucheloup. Gibelotte, longue, délicate, blanche d'une blancheur
lymphatique, les yeux cernés, les paupières tombantes, toujours épuisée
et accablée, atteinte de ce qu'on pourrait appeler la lassitude
chronique, levée la première, couchée la dernière, servait tout le
monde, même l'autre servante, en silence et avec douceur, en souriant
sous la fatigue d'une sorte de vague sourire endormi.

Il y avait un miroir au-dessus du comptoir.

Avant d'entrer dans la salle-restaurant, on lisait sur la porte ce vers
écrit à la craie par Courfeyrac:

''Régale si tu peux et mange si tu l'oses.''

The Parisians who nowadays on entering on the Rue Rambuteau at the end
near the Halles, notice on their right, opposite the Rue Mondetour, a
basket-maker's shop having for its sign a basket in the form of Napoleon
the Great with this inscription:—

have no suspicion of the terrible scenes which this very spot witnessed
hardly thirty years ago.

It was there that lay the Rue de la Chanvrerie, which ancient deeds spell
Chanverrerie, and the celebrated public-house called Corinthe.

The reader will remember all that has been said about the barricade
effected at this point, and eclipsed, by the way, by the barricade
Saint-Merry. It was on this famous barricade of the Rue de la Chanvrerie,
now fallen into profound obscurity, that we are about to shed a little
light.

May we be permitted to recur, for the sake of clearness in the recital, to
the simple means which we have already employed in the case of Waterloo.
Persons who wish to picture to themselves in a tolerably exact manner the
constitution of the houses which stood at that epoch near the Pointe
Saint-Eustache, at the northeast angle of the Halles of Paris, where
to-day lies the embouchure of the Rue Rambuteau, have only to imagine an N
touching the Rue Saint-Denis with its summit and the Halles with its base,
and whose two vertical bars should form the Rue de la Grande-Truanderie,
and the Rue de la Chanvrerie, and whose transverse bar should be formed by
the Rue de la Petite-Truanderie. The old Rue Mondetour cut the three
strokes of the N at the most crooked angles. So that the labyrinthine
confusion of these four streets sufficed to form, on a space three fathoms
square, between the Halles and the Rue Saint-Denis on the one hand, and
between the Rue du Cygne and the Rue des Prêcheurs on the other, seven
islands of houses, oddly cut up, of varying sizes, placed crosswise and
hap-hazard, and barely separated, like the blocks of stone in a dock, by
narrow crannies.

We say narrow crannies, and we can give no more just idea of those dark,
contracted, many-angled alleys, lined with eight-story buildings. These
buildings were so decrepit that, in the Rue de la Chanvrerie and the Rue
de la Petite-Truanderie, the fronts were shored up with beams running from
one house to another. The street was narrow and the gutter broad, the
pedestrian there walked on a pavement that was always wet, skirting little
stalls resembling cellars, big posts encircled with iron hoops, excessive
heaps of refuse, and gates armed with enormous, century-old gratings. The
Rue Rambuteau has devastated all that.

The name of Mondetour paints marvellously well the sinuosities of that
whole set of streets. A little further on, they are found still better
expressed by the Rue Pirouette, which ran into the Rue Mondetour.

The passer-by who got entangled from the Rue Saint-Denis in the Rue de la
Chanvrerie beheld it gradually close in before him as though he had
entered an elongated funnel. At the end of this street, which was very
short, he found further passage barred in the direction of the Halles by a
tall row of houses, and he would have thought himself in a blind alley,
had he not perceived on the right and left two dark cuts through which he
could make his escape. This was the Rue Mondetour, which on one side ran
into the Rue de Prêcheurs, and on the other into the Rue du Cygne and the
Petite-Truanderie. At the bottom of this sort of cul-de-sac, at the angle
of the cutting on the right, there was to be seen a house which was not so
tall as the rest, and which formed a sort of cape in the street. It is in
this house, of two stories only, that an illustrious wine-shop had been
merrily installed three hundred years before. This tavern created a joyous
noise in the very spot which old Theophilus described in the following
couplet:—

The situation was good, and tavern-keepers succeeded each other there,
from father to son.

In the time of Mathurin Regnier, this cabaret was called the
Pot-aux-Roses, and as the rebus was then in fashion, it had for its
sign-board, a post (poteau) painted rose-color. In the last century, the
worthy Natoire, one of the fantastic masters nowadays despised by the
stiff school, having got drunk many times in this wine-shop at the very
table where Regnier had drunk his fill, had painted, by way of gratitude,
a bunch of Corinth grapes on the pink post. The keeper of the cabaret, in
his joy, had changed his device and had caused to be placed in gilt
letters beneath the bunch these words: "At the Bunch of Corinth Grapes"
("Au Raisin de Corinthe"). Hence the name of Corinthe. Nothing is more
natural to drunken men than ellipses. The ellipsis is the zig-zag of the
phrase. Corinthe gradually dethroned the Pot-aux-Roses. The last
proprietor of the dynasty, Father Hucheloup, no longer acquainted even
with the tradition, had the post painted blue.

A room on the ground floor, where the bar was situated, one on the first
floor containing a billiard-table, a wooden spiral staircase piercing the
ceiling, wine on the tables, smoke on the walls, candles in broad
daylight,—this was the style of this cabaret. A staircase with a
trap-door in the lower room led to the cellar. On the second floor were
the lodgings of the Hucheloup family. They were reached by a staircase
which was a ladder rather than a staircase, and had for their entrance
only a private door in the large room on the first floor. Under the roof,
in two mansard attics, were the nests for the servants. The kitchen shared
the ground-floor with the tap-room.

Father Hucheloup had, possibly, been born a chemist, but the fact is that
he was a cook; people did not confine themselves to drinking alone in his
wine-shop, they also ate there. Hucheloup had invented a capital thing
which could be eaten nowhere but in his house, stuffed carps, which he
called carpes au gras. These were eaten by the light of a tallow candle or
of a lamp of the time of Louis XVI., on tables to which were nailed waxed
cloths in lieu of table-cloths. People came thither from a distance.
Hucheloup, one fine morning, had seen fit to notify passers-by of this
"specialty"; he had dipped a brush in a pot of black paint, and as he was
an orthographer on his own account, as well as a cook after his own
fashion, he had improvised on his wall this remarkable inscription:—

One winter, the rain-storms and the showers had taken a fancy to
obliterate the S which terminated the first word, and the G which began
the third; this is what remained:—

Time and rain assisting, a humble gastronomical announcement had become a
profound piece of advice.

In this way it came about, that though he knew no French, Father Hucheloup
understood Latin, that he had evoked philosophy from his kitchen, and
that, desirous simply of effacing Lent, he had equalled Horace. And the
striking thing about it was, that that also meant: "Enter my wine-shop."

Nothing of all this is in existence now. The Mondetour labyrinth was
disembowelled and widely opened in 1847, and probably no longer exists at
the present moment. The Rue de la Chanvrerie and Corinthe have disappeared
beneath the pavement of the Rue Rambuteau.

As we have already said, Corinthe was the meeting-place if not the
rallying-point, of Courfeyrac and his friends. It was Grantaire who had
discovered Corinthe. He had entered it on account of the Carpe horas, and
had returned thither on account of the Carpes au gras. There they drank,
there they ate, there they shouted; they did not pay much, they paid
badly, they did not pay at all, but they were always welcome. Father
Hucheloup was a jovial host.

Hucheloup, that amiable man, as was just said, was a wine-shop-keeper with
a mustache; an amusing variety. He always had an ill-tempèred air, seemed
to wish to intimidate his customers, grumbled at the people who entered
his establishment, and had rather the mien of seeking a quarrel with them
than of serving them with soup. And yet, we insist upon the word, people
were always welcome there. This oddity had attracted customers to his
shop, and brought him young men, who said to each other: "Come hear Father
Hucheloup growl." He had been a fencing-master. All of a sudden, he would
burst out laughing. A big voice, a good fellow. He had a comic foundation
under a tragic exterior, he asked nothing better than to frighten you,
very much like those snuff-boxes which are in the shape of a pistol. The
detonation makes one sneeze.

Mother Hucheloup, his wife, was a bearded and a very homely creature.

About 1830, Father Hucheloup died. With him disappeared the secret of
stuffed carps. His inconsolable widow continued to keep the wine-shop. But
the cooking deteriorated, and became execrable; the wine, which had always
been bad, became fearfully bad. Nevertheless, Courfeyrac and his friends
continued to go to Corinthe,—out of pity, as Bossuet said.

The Widow Hucheloup was breathless and misshapen and given to rustic
recollections. She deprived them of their flatness by her pronunciation.
She had a way of her own of saying things, which spiced her reminiscences
of the village and of her springtime. It had formerly been her delight, so
she affirmed, to hear the loups-de-gorge (rouges-gorges) chanter dans les
ogrepines (aubepines)—to hear the redbreasts sing in the
hawthorn-trees.

The hall on the first floor, where "the restaurant" was situated, was a
large and long apartment encumbered with stools, chairs, benches, and
tables, and with a crippled, lame, old billiard-table. It was reached by a
spiral staircase which terminated in the corner of the room at a square
hole like the hatchway of a ship.

This room, lighted by a single narrow window, and by a lamp that was
always burning, had the air of a garret. All the four-footed furniture
comported itself as though it had but three legs—the whitewashed
walls had for their only ornament the following quatrain in honor of Mame
Hucheloup:—

Mame Hucheloup, a good likeness, went and came from morning till night
before this quatrain with the most perfect tranquillity. Two
serving-maids, named Matelote and Gibelotte,[[49]] and who had never been known
by any other names, helped Mame Hucheloup to set on the tables the jugs of
poor wine, and the various broths which were served to the hungry patrons
in earthenware bowls. Matelote, large, plump, redhaired, and noisy, the
favorite ex-sultana of the defunct Hucheloup, was homelier than any
mythological monster, be it what it may; still, as it becomes the servant
to always keep in the rear of the mistress, she was less homely than Mame
Hucheloup. Gibelotte, tall, delicate, white with a lymphatic pallor, with
circles round her eyes, and drooping lids, always languid and weary,
afflicted with what may be called chronic lassitude, the first up in the
house and the last in bed, waited on every one, even the other maid,
silently and gently, smiling through her fatigue with a vague and sleepy
smile.

Before entering the restaurant room, the visitor read on the door the
following line written there in chalk by Courfeyrac:—
